The Challenge

Today I went grocery shopping with a budget of around $150.00 for the next two weeks worth of food. I figured I would hit up Walmart, even though I am normally a Safeway grocery shopper, so I could save some money. In the long run I think I may have saved money at Safeway as there carts are smaller than Walmart’s carts. Therefore, making it look like I have plenty of items in my shopping cart earlier. So you can see where this may be going. 

That’s right! I spent way more than I had planned in my budget on food. Although, I bought everything I needed and added on a few household items as well. I still bought more than I would have at Safeway. Even though if I would have bought all the same items I did, at Safeway, I would have spent more than I did today at Walmart.

Let me lay it out for you, I spent 5 cents short of $200 today at Walmart on groceries. WOW is right!

So “The Challenge” is: Christy will not eat out or purchase any quick snacks for the next two weeks! With the exception of Lindsay and My’s trip to San Francisco next Tuesday. I will be splurging for a wonderful lunch there. 

The challenge should be easy. I bought plenty of throw in my lunch bag for lunch type items and lots of healthy choices that could become quick snacks.

Tomorrow starts the challenge and I am already off to a fairly good start, as there is plenty of left overs from tonights stroganoff for lunch and dinner tomorrow. 

I will let you know how it goes, including my struggles and triumphs.

A bit of a Hiatus

When will I ever be on top of this thing? Really, I do love blogging but lately life has really gotten the best of me. I mean one week turned into three weeks.  Well in all hopes I am back from my blog hiatus. Although, I am not sure I could really call it a hiatus. I wasn’t taking a break on purpose. Really. Life just got in the way. 

So lets recap my last couple of weeks. Last time I posted I informed everyone of my acceptance to San Francisco State University. That was some news I had been waiting a life time to receive. YAY! It’s finally here. Although, now I am starting to freak out a little bit. The thought of having to find a new job and a new place to live is a little overwhelming. I’m sure that once I am finished with this semester of school things will be lest overwhelming. 

Other than the winding down of my excitement these last few weeks have brought me some health issues. On the 15th I passed out and ended up in Urgent Care due to intolerable stomach pains and vomiting. This turned into testing for Salmonella and/or Chron’s Disease. At this point I have neither but the doctors have me under close watch.

I think most of my health outrage was due to stress. Between work and school I have been fairly strung out. Well, Spring Break is a week away and I will have a little bit of a hiatus from school then. Lindsay and I will be headed to the Bay Area for a day to check out places and areas for me to live. (I will make sure to take lots of pictures and update you all on that adventure) 

This past weekend was fairly relaxing. I had the joy of housesitting the pups (Penelope and Rocky) and having Mr. Handsome join me. I worked everyday but made the best of the time I had with the pups and Mr. Handsome. I miss having time to spend with him. At least we are getting used to the idea of being apart for awhile now, before I move. Should make the adjustment fairly easy. 

My poor kitty Sweetpea seems to have separation anxiety. Poor Kitty threw up a few times while I was gone and now that I am home won’t leave my side. Makes me feel very loved. Image

Well here’s to a new week. I vow to blog more and catch up on the 243 unread blogs on my bloglovin account. As well as, to start waking up in the morning and starting my day with some Yoga. Hopefully that will releve some of my stress and keep me calm.

The excitement keeps growing!

If you have been reading my blogs you would know I have been awaiting my acceptance to San Francisco State University. Well on Saturday I received my acceptance letter. Yay me… San Francisco here I come.

I figured the excitement would go away after a day or two but here it is Tuesday and I am still on cloud nine. I can’t deny my nerves are getting the best of me too. 

The thought of relocating to the city is a little frightening. I am going to be about two hours away from Mr. Handsome which, is really going to suck. Trying to find a reasonably priced place to live is harder than all the homework and work I have combined together. This doesn’t include I am going to have to find a new job that is going to pay me enough to pay for that apartment I find as well.

Lettuce Wraps and Peanut Sauce Pasta

Last night I attempted the Monday dish from The Everygirl Handbook Week’s Recipes under $50.00

I was very tired last night when I got home and all I wanted to do was pop a frozen burrito in the microwave, shove it down my throat and head straight to bed. However, I told myself this week I am cooking every meal in that Handbook and not straying away. Each meal makes at least two servings which gives me just enough for dinner and lunch the next day. Which means no eating out at all…which also means saving money!

Like I said yesterday in m Weekend Recap post my grocery store trip did run me upwards of $50.00 more than the Handbook says and only about $30.00 of that was money I spent on other items I needed. But Hey after last nights dinner, if they all turn out just as good it will be worth it.

So last night was Lettuce Wraps and Peanut Sauce Pasta. The whole meal took me about 45 minutes to make and that includes the prep time.

I was very please with the outcome of the lettuce wraps and the pasta smelled delicious but ended up being a bit too hot for me. If you don’t like hot/spicy things I would hold off on using the crushed red pepper. I didn’t think the crushed red pepper was that much but for the amount of pasta it was over bearing and I couldn’t handle more than one bite. : (

I do have to say I was rather happy I stuck to my mission and didn’t just pop a frozen burrito in the microwave. I will defiantly keep the recipe for both the wraps and the pasta and will note not so much or no crushed red peppers at all for the next time I cook it. I think its a meal I will have to cook for Mr. Handsome sometime.

Time flys by when you’re living life!

I can’t believe it is already Tuesday and I have not posted since last Monday! Wow… time flys by when you’re living life to its fullest. I do admit I am a very busy person…

Well let me recap on my weekend!

Friday was a working day but I ended up playing more than working! As you know I work as a manager at B&L Bike Shop in Davis, CA and my mother is the owner of the shop. So with that said on Friday we were invited by some bicycle friends of ours to join them on a bicycle ride from Davis to Sacramento to check out NAHBS (National American Handmade Bicycle Show) and for some beer tasting in between the show and our ride back in honor of Sacramento Beer week. So more fun then work right? Here are a few pictures of some of the neat handmade bicycles and the beer sampler my mom and I split over lunch!

So that was a lot of fun and totaled in 35 miles of riding! Yay for getting some miles in!

Saturday I spend all day DEEP cleaning my apartment as I was having a Thirty-One Party. No I’m not turning Thirty-one… Its a company that specializes in bags for travel, organization and style. After the Thirty-One Party I hit the town with my roomie and some of our girlfriends. Although our night didn’t last two long we had a blast and I paid the repercussions on Sunday!

Sunday I woke up not feeling so hot after my night out on the town Saturday… but I kicked myself in to gear and headed off to work. Drinking lots of sprite and eating greasy food all day. After work my BFF came over for a study session that turned into pizza and watching “27 Dresses”! Studying was put on hold till Monday!

So there you have my busy weekend. My week ahead seems just as busy! Tonight I start cooking from TheEveryGirl 5 Meals for $50.00 and will post recaps of each meal for you to follow along.
